And while I might appreciate a good cognac, I generally prefer a peaty Scotch which doesn't benefit from excessive aging:

Innerestingly, when aging liquor a long time juan ends up paying more for the qualities of the barrel than what was initially inside it.

My exact thoughts when I read the details.....DNA? aged 100 years?
