Bounce to Clip(s) is for rendering non-destructive edits/processing permanent and merging separate clips of the same type together - whether audio or MIDI. What you are wanting to do is render the output of a soft synth being driven by a MIDI clip. This is done by Tracks > Bounce to Track(s) with both the MIDI and synth audio output tracks selected (assuming they're separate and not combined as a Simple Instrument track). Or you can use the Freeze functionality to generate an audio clip in place in the synth track.
