Why would you? It doesn't take much hard drive space.

Yep.  You could have uninstalled it beforehand, during, or afterwards and it wouldn't have mattered.  In fact, unless you need some extra disk space there's really no reason to uninstall it at all.  But yes, you can uninstall it if that floats your bowling ball.

You'll lose any plugins that were installed by X3 and not in Platinum though.

And..... it can (it has in the past) really mess things up.
 
I only uninstall by the process of "starting over" and then I selective go back and get the "extras" from a custom install.

You may or may not lose plugins installed in X3. I uninstalled X3 after installing Platinium & did not lose my toontrack or focusrite plugins. I think it's because I ran Platinium before I uninstalled X3 so it could find & scan the toontrack & focusrite folder locations for their respective DLL's.

You won't lose 3rd party plugins but when uninstalling there are shared folders into which Sonar has installed newer versions of various programs and sometimes these get deleted.

It's always best to uninstall first then install new.

 Indeed. I uninstalled X3 and found both EZ Drummer and Dimension Pro are missing on every project. I can certainly reinstall EZ but I wonder why D Pro is gone since it is installed under Platinum.
 
Otherwise and so far, Im enjoying the new release.

NO!
Never uninstall a previous version. I have old projects that work fine in 8.5.3, but are a mess in X3e. Often it is the loss of paths used by plugs.
For most of the projects I have migrated to X3 I have had to clone all the tracks to get colors and icons to work properly. And had to create new buses to replace the ones that were silent without reason.
Sonar 2015 is NEW. It has issues. Just read all the headers of the many posts already identifying these issues.
Until you know all your projects will work, and that no bugs will interfere with how you work, keep the old stuff around.
