Ken, you've already been given answers that will do what you want. You should go look at the Event Inspector video tutorial Scott posted - after watching, you'll understand everything about that very useful tool.
I'm adding one more method of doing what you want, because it's all I ever do, and so I feel it's the simplest approach.
You asked how to change the MIDI channel for everything "on a staff"--that would indicate you want to change the MIDI channel of an entire track. In the Track View, all those notes will be on one track. By default, you have the Track Inspector visible on the left side of the screen. The MIDI channel menu in that determines what channel that track will play on.
When I set up my MIDI tracks for a project, all I need to do is choose the channel I want there on the track - then with my MIDI keyboard always set to transmitting on channel 1, the correct soft synth instrument plays automatically just by selecting the track. It makes MIDI production extremely simple and straight forward, without needing to do any special filtering or further twiddling.
A quick example of what else can be done by setting the MIDI channel in the Track View - I've recorded a track intended for a Flute. During the arranging process, I decide I want to try an Oboe out on that track instead. I just change the MIDI channel to the one my Oboe is on in my sampler/synth. Instant auditioning of the new instrument.
