Control/Record Volume, Panning or other

Basically what I have been doing for a LONGGGGG time is laying down a track the going back and editing the volume, panning and other artifacts of the track manually.
Is there a way to do it while I'm listening to the track I just recorded and using my Surface Controller to write the volume changes on the fly?

Hope this makes sense.

Thank you and Merry CHRISTmas.
