To 'draw out' a note using the amplitude envelope, you have to define a sustain point. See the "Envelope Generators" section in the Dimension help or in your manual for more info on sustain points.
Here is a step-by-step tutorial:
1) Open Dimension and select the Mini Piano (dry) program from the program browser
2) Click in the amplitude envelope section and then press the 'r' key to reset the amplitude envelope. At this point you should see and empty window like this:

3) Now right click about half way into in the Amplitude envelope section to give you an envelope that looks like this:

4) Click on the envelope node you just created to make sure it is selected. Now hit the 's' key on your keyboard to define a sustain point. You'll notice a red line that defines the sustain point:

At this point the amplitude will will ramp up to the sustain point and then remain at the sustain point until you release the note from your midi controller.
5) Now, if you right click in the envelope section beyond the sustain point, the amplitude will follow that path after you release the note. Here is an example:

6) Now, if you use the scroll wheel on your mouse you can zoom out in the evelope section and move the final node to increase the sustain:
