Eleven rack and v-studio

Hey group, I just ordered my v-studio 100 and am pretty stoked.  I am just trying to get my head around this device before it arrives.  If I plug my outs from my eleven rack into the v-studio and lay a track using stereo out with the eleven rack onto an s/d card.  Afterwards I want to add another stereo track with the same eleven rack.  Will I be able to do that in the stand alone mode?  And when I eventually hook up to cakewalk will I have two tracks L/R?   Thanks for your comments

    Yes, just make sure when you record your overdub, so to speak, that you have the vs100 channels hard panned.
