I love this sizzling soaraway thread so much I may just slice it up thinly and fry it.

To heck with the TOS violation - this could become an official Coffee House Cult... may I present St. Becan? (Nope, not making this up).

Here's a picture of Aussie becan:

You notice the large meaty part of the becan which is the Candian cut, whereas in the US they discard that meaty part and instead prefer the fatty part.

The Aussies however aren't fussy at all, Aussies won't discard any part of that becan, they'll also keep that tough rind that runs along the edge of the fat.  I usually cut that rind off before cooking because it's almost impossible to eat since the texture is like chewing on hard leather shoe laces and it would take years to digest that rind.

So imagine on a typical hot day you walk into an Aussie restaurant and this hot sweaty chick with a loud voice says; 'Gid'day Mate' then slams a plate of Aussie becan on the table, 48 slices of quality becan piled up high, that unmistakable becan aroma fills your nostrils, all that becan cooked to perfection!

-

greg - ok, I admit...that actually looks quite good.  (sans the rind, of course.  rinds and fat back are for pinto beans!)

Oh yes! Beans cooked with becan fat-back n rind is awesome.

For deep frying;  add lots of becan fat n rind to 'flavor the vegetable oil or peanut oil', it adds great becan flavor to potato fries and chicken.

I also like to oven bake;  potatoes, sweet potatoes, butternut squash all cooked using nothing but becan fat.

Main Course;  smoked 'slow-cooked' super-tender n juicy pork shoulder wrapped in lots of becan and then drizzled with homemade mouthwatering BBQ sauce.
Don't forget, all good meals need a little bread with them.  Especially if it's sweet cornbread  baked in a cast iron pan with a little bacon grease to crisp up the edges... mmmmmmm.

This happens every time I have a good day at the gym.  Darn you, pork fat, and your devilish temptations...

If you want Becan in Dubai you have to go into a room hidden away at the back of the supermarket. Then, its all there, American Bacon, Danish Bacon, British Bacon, Back Bacon, Streaky bacon and Kenyan Bacon (like the others only much cheaper and not as good).  It's like a porn shop.

That's what I get for marrying a Southern Girl (she's from Alabama) whom I met in Dallas TX - not only do I have Midwestern comfort food to contend with, there's all that great stuff from below (and west of)  the Mason-Dixon Line to keep me in mortal danger...

Beag, I think we both could be in serious trouble if we started a CH family picnic...

In the ensuing confusion, I'll try to sneak up and snag some Becan.  I just hope they haven't caught on to the plan.

What a great idea Russell, a CH picnic. Too bad we're all to far apart to make it happen. We could make it like an open mic event and get everyone to play three songs. Of course Swat would have to invited when certain factions finally met in person. But if the bacon and cornbread was good, we all might just pull it off. Who's bringing the beans?

I've got to quit readin this forum on my lunch hour.  You mentioned skillet cornbread and the first thing I thought of was greens and black-eyed peas on the side... next thing, it'll be cheese grits.  With bacon on top!

I don't know - it might work.  There's regional user groups for the Sonah. We could have regional picnic groups with a 5-year mass gathering in a central location.  For the US, Ellsworth KS looks pretty central... on Google maps.

oh man!

or pinto beans with a side of "catch up".  that's not tomato based for your non-southerners!    and the beans will be cooked with fat back (becan's 1st cousin!)

I used to have cheese grits every morning for breakfast for a long time.  mmmm....

Oh yeah!  There's a Scandinavian version you find a lot in this part of the world.

Here's another recipe from these parts: perogies.  (This particular recipe includes bacon...).

I'm thinking we could put together one heck of a "comfort food" cookbook, eh?
