Do you hear the distortion in both speakers and headphones? Do you hear it if you play it back through other software, such as WMP? How about if you export and copy to another playback device, such as an MP3 player? Does it go away when you bypass all plugins?
What I'm getting at is whether you can isolate where in the signal chain the distortion is occurring. If you hear it everywhere, then it's either in the recorded clip or is being distorted by a plugin. If it's still there with all plugins bypassed, then it's being recorded that way.
You may have all your levels under control inside the computer but still be overdriving your interface, and that's where the distortion is originating. The UA-25 has a built-in limiter. Make sure it's enabled and watch the LED indicator while you're recording to make sure it's not engaging.
Are you recording your guitar direct or with a microphone? If the latter, is the mic capable of handling the levels you're playing at? Does the mic have a pad to reduce its output?
All else is in doubt, so this is the truth I cling to.
