1) Sound card inputs are mono so they set them up so you can pair them for stereo. So usually they are like this:
1 L
2 R
1&2 Stereo
3 L
4 R
3&4 Stereo
5 L
6 R
5&6 Stereo
7 L
8 R
7&8 Stereo
Check Options-Audio-Drivers to make sure you have all 8 (or all 4 pairs) selected.
2) Most instruments are mono, such as microphones, guitars, etc. You should record a mono source onto a mono track otherwise you won't be able to pan it across the stereo field. This is a common newbie misconception.
