Used to do a lot of Oriental cooking... When doing any sort of stir frying, make sure to use peanut oil. If you are after a more authentic flavor, no other oil will be as good.

Oh, a few other things, work with as high a heat as possible, and work quickly. For a "dry" rice try using just a bit of soy sauce. For a "wet" rice use a mix of soy sauce with a beaten egg (or eggs depending on quantity of rice). Another essential ingredient: finely sliced, stir fried green onions, both bulb and green stems. If not used, the rice will taste like it is lacking something. Adding some stir fried bean sprouts can give a nice flavor boost. When stir frying rice, using long grain rice is best, and rinsing the excess starch off the rice before cooking is also a good idea.

When stir frying rice, using long grain rice is best, and rinsing the excess starch off the rice before cooking is also a good idea. +1 I usually boil the rice el-dente and rinse the starch off it with cold water which also stops it cooking further and turning to stodge when you fry it. Add the vegetable ingredients you want to add along with any spices you want, (chives, chopped shallots etc. Use five spice and star anise for chinese and garam masala for indian flavours) and sear those in hot oil first. When making egg-fried rice just add small amounts of the beaten egg and rice and stir with a spatula if you don't have a wok to toss it around in. Add more rice and more egg until the egg is all cooked then add the rest of the rice and stir or toss until piping hot throughout. After serving make sure you immerse the pan or wok straight in water unless you want to spend a long time cleaning it.

My wife also makes a wonderful fried rice dish and of course it's made to our taste with all the various s p i c e s (chili flakes, ginger, garlic etc....I'm not sure what else she puts in it, but a lot of what's already mentioned is in there). When she does make fried rice (couple of times a month) I do know that the type of rice she uses is excellent (Jasmine Rice).... this rice is light, fragrant, and flavourful......which is also part of our daily staple diet. How did your fried rice turn out Bill?

bayoubill Today I attempt FRIED RICE! The rice is made and now I will fry it! I can do really good chinese food on a GRILL ... I can not do it on a pan or a wok ... and that goes back to my restaurant days, when we had grills ... and fried rice is easy when it's on the grill and you can make sure clearly that you get the correct/proper amount of crispiness that you want on it. If I ever have a house ... it WILL have a grill .. a real one!
As a wise Guy once stated from his holy chapala ... none of the hits, none of the time ... prevents you from becoming just another turkey in the middle of all the other turkeys!
