A bit convoluted but I’m happy with my work round.
If you're working with existing MIDI tracks, when you insert the softsynth, don't select Simple Instrument track. Instead just let it Add First Synth Output. Then you can just point the output of the MIDI tracks to the softsynth and not have to move the MIDI tracks. The Simple Instrument track is really for when you want to record a new MIDI track.
