what is the simplest way to convert midi to audio in sonar 8.5?

it depends entirely on what you have your MIDI output set to.  there are 3 scenerios I can think of all with different needs before you can get a wave file from it.
 
if you're using a softsynth, freeze or bounce is the best option.
if you're using MS GS Wavetable synth as your MIDI output then you'll need to EXPORT the MIDI/OUTPUT track then import the resulting wave file back into sonar.
if you're using a hardware synth then you'll need to set up an audio track and record the synth's audio output.

Hey Karen-- don't laugh this is what I was asked to do last week, I go to this lady's house and record a digital piano for her, She even hired the pianist! She just wanted a CD of her compositions.
It cost her $150. The pianist pointed out a few errors in the score so the lady goes and fires up Sibelius? I played with it while they were messing with the score and noticed it exports MIDI and Audio???   So she was using your method.
If mr Flojo returns I advise that the first thing to do if you have a simple question is open the help menu and use the search function.
It's much faster than posting on a forum. You will want to read as much of those files as you can anyhow.
