There are numerous methods that can be used.  Without knowing what VST you are using and whether they will accept RPN the method I will recommend is one that can work with any VST.

    1.  Clone the track twice for total of three tracks( RIght click in the track header and clone track will be listed.  In the box it will ask for Repetitions put 2 to give a total of 3 tracks)

    2.  Select the VST , channel and patch for each of the new tracks.

    3.  Bring up the PRV(piano roll view)with your original track. This will become the right hand split.  In the keyboard at the left select the note 1 semitone lower than the lowest split note that you want to retain in the right hand track and then drag down to the bottom while holding the left mouse button.  This will select all  the notes below the split point.  Hit the delete key.  You know just have the notes for your right hand track.

    4. Repeat the process for left hand track except select 1 semitone higher than the highest note to retain and drag up.  Delete.

    5. In the third track the section that you want to have a third voice in, select the track, go to the timeline and drag the section that you want to retain, right click in the track and select split.  In the dialogue box that comes up select the "Split at selection" box .  Now if you select the clips the right or left and hit delete and you are left with just the section you want. ( if you want to have more than 1 area kept then select all the areas that you want to retain as above and then delete everything you don't want.

For playing live what I suggested won't really work.  I was assuming you wanted to record and reassign what you recorded to different instruments.  For what you are trying to do live, can your keyboard send to 2 channels based on the left/right split?   If so then it would be just a matter of assigning 1 track to 1 channel to 1 vst and the other to another.  You may want to do a forum search for playing live using sonar or start a new post to get some feedback for suggestions on doing this.
