cakewalk ua-25ex Soundcard and pedals

Is it safe to run a distortion or overdrive pedal into the instrument in jack on the cakewalk ua-25ex Soundcard at unity gain?

Sure.  Just make sure you adjust the input level using the gain control on the ua-25 (you don't want the clipping indicator light to be on).  Otherwise, you'll get a type of distortion you don't want.
