Darn the Torpedoes I'm Making Chili

Darn the Torpedoes I'm Making Chili! Yes even though the thermometer reads over 100 right now I'm making chili. Some of you may ask "why bayoubill, you handsome devil, why now in this heat?" and I would say" Cuz Boney made me what she calls "SALT WATER CORNBREAD". I haven't had that since I was a kid and I gotta tell ya IT"S AWESOME!!!! So this afternoon I'm mixin and grinnin! Now to let it simmer. I can't wait! YUM!!!!

    Damn, now I gotta go to Wendy's and get me a large chili. I'm too lazy to make it myself.

    My mom made the best chili I've ever had, and I've had a lot, got the gut to prove it. God what I'd give for a big ol' bowl if it now. She would have been 84 this past Saturday.

    Damn, I just realized I haven't eaten yet today and it's almost 7PM. No wonder I'm feeling weirder than normal. HEHE

    my ol pal its beef! becan is the secret ingredient! It cooks for 1 1/2 days before it's ready. and it is a little on the hot side but not too much!

     That looks yummy.........

    Try this:

    2lbs ground beef 80%lean,don't drain the grease
    1/2 bell pepper run through the food processor or cut up fine
    1/2 of a large vidalia (or other sweet) onion finely cut
    one large or two smaller cans of  kidney beans
    one 16oz can of tomato paste
    Half a dozen fresh large tomatoes cut up or a large 28oz. can of tomatoes.
    two tablespoons of chili powder or a prepackaged chili seasoning
    11/2 cups of water
    1 tsp of salt

    Cook the hamburger first while the other ingredients are cooking on low heat covered(very low heat. Then dump the hamburger grease and all out of the frying pan into the mix. Simmer covered stirring occasionally at med low heat for 45 mins or simmer on very low heat for at least an hour.Alternative- put in crock pot 4 hours min.

     Serve over fresh rice and top with your favorite sprinkle cheese. I always make adding peppers or hot sauce optional as not everyone likes it hot.

     I like the idea of adding corn and other types of beans like in the pic.Look like a  few less tomatoes than I use.
