The sound generator in most synths have a filter on the incoming midi stream that allows you to screen what messages it (the sound generator) responds to.. this is commonly called a RX (receive) filter... other common things that can be removed from affecting the sound generator are pan, volume, aftertouch, modwheel etc.
So there are two ways of selecting your instruments in your setup:
1. Do so on the tyros, and disable PC (program change) reception, or,
2. Have PC enabled (probably on by default) and select patches from Sonar.
Note: If you do not have an .INS file (instrument definition) for the Tyros, you need to enter bank and patch number manually into each midi track in Sonar.. this is tedious, but the information to do so will be with your Tyros.... also note, if your experiments keep giving you only piano sounds then its very likely a setup issue of your patch assignments.. as adefault patch is commonly piano.
I would suggest the following steps...
1. put some midi data into a MIDI track..either record from the tyros or any other keyboard, entry method you have..even Piano Roll View (PRV)..
2. assign the midi out to be the tyros on Midi channel 1, and pick a patch..
3. play the clip..does the correct patch sounds in the tyros?
4. Insert another midi track and record a midi clip.
5. in the output options of track 2 select midi channel 2 and select another patch on the tyros.
6. play both tracks..
