Setting up the metronome for multiple/fluctuating tempos in a project?

So I've started working on laying down bed tracks for my old traditional folk music band and I have a question in regards to the metronome. I've managed to get the hang of playing along with it and it is working out quite well however some of these tunes require multiple tempos. I'm not quite sure how to do that so I was hoping someone could point me in the right direction by either providing some tips here or letting me know of any resources within the manual or elsewhere that would explain the process. There are three scenarios I will need this for.
1) Using a starting tempo for a section then increasing it with each new cycle of the song. eg: First 12 bars 80 BPM, second 12 bars 100 BPM, third 12 bars 120 BPM and so on.
2) Increasing the tempo gradually over the course of a section or song. eg: Start point is 80 BPM then tempo increases steadily to 140 BPM at the end. (Think like an old traditional Greek style dance)
3) Combining both of these. eg: Start at 80 BPM with a gradual increase over 12 bars to 100 BPM then holding at 100 BPM for 12 bars then again increasing tempo over 12 bars to 120 BPM.
I'd also be interested in "free form" tempo swells and drops like you'd hear at the end flourish of a rock song as I think it's going to be difficult to duplicate that properly with a straight tempo clicking away in my ear.
