Had a "duh" moment in thinking "why not just put the synths on different midi channels and switch midi channels on the controller". Problem solved :P
That's exactly what I used to do, for live performance. I would have an instance of Kontakt loaded up with a bunch of instruments, each set to a different midi channel, then switching midi channels on my keyboard would give me instant access to the different sounds.
Since then, I moved to using a program called Forte, from a company called Brainspawn. (I speak of only for live performance - Sonar is still my beloved recording software).
Forte is MUCH more suited to playing live (nothing against Sonar - I LOVE Sonar), because it is built from the ground up to do nothing but manage multiple VST soft synths for live playing.
