Mike,
it really comes down to how much you have to spend. I've been very happy w/ my TC Konnekt 48 - and it will do what you want if you buy a few more preamps (it comes with four but 8 line inputs). Of course, it is FW only which makes it less acceptable for lap tops. But if you are on a desktop, it is a good deal. 12 X 8 analog plus a master out, ADAT smux and built-in dsp. The reverb is sweet - from the TCK 4000 and 2 stereo channel strips which are both pro. Conversion is right up there - esp. since you can find them new from $1000.
There is RME. + $1000. Or if you want to go for broke the Lynx 8/8 w/ USB is about $2000. You'll never have to say you're sorry w/ that unit, and you can add preamps of your choice. The rane or m-audio dsm (or whatever) are cheap and good, as is the Yamaha 8x premap, and you could mix in some better preamps since you are doing a couple of tracks at a time mostly. The ISA One is a great deal, but I don't use mine as much since I got the Warm WA12. More vintage sounding - just right on electric guitars esp. Like converters and everything else, there is the point of diminishing returns. Still, I mostly track with the RND Portico Channel strip now, but it comes w/ everything as a channel strip should - eq, comp, deesser. The preamp isn't that much better than those I listed above. You pay for it, but if something doesn't sound good through it the hardware ain't to blame.
Just don't expect new hardware to jump out at you soundwise. Well, it does, but that is mostly expectation. But once you start using better gear, the little things become obvious as your ears learn, and then you learn to use the edges of your new toy.
Good hunting!
