    Who makes them? Is it a dedicated 3d team or is there some sort of interactive make your own app?

    You can get the software (I think I have it but haven't had time to use it!).  It's called No Limits.  Actual roller coaster designers say it has the best physics.  There's quite a few videos on You Tube (most are far more realistic) - just search for "No Limits" and you can watch a bunch of good ones.
     
    I picked this one because it was so excessive.
