"Mackie Control" has fixed reaction on particular controls. You can try generic (customizable) plug-ins, Generic Control, ACT MIDI, or my own (see the signature).
For Pan, have you tried "Disable remote control"? It is enabled in menu in case something is mapped, right after "Remote control...".
For "jumping" parameters. I do not have NanoKontrol, but in case it is in "Mackie Mode", it's knobs should imitate endless encoders. And they produce either 1-2 or 64-65 instead of full range. Other reason can be "Normal touch" behavior instead of "Timeout touch". I do not know either it is possible somehow change it for MIDI mapped parameters, I have noticed that with my plug-in (where you can specify that explicitly).
