Interleave - Stereo/Mono Bus Question

I'm trying to use a feature in Melodyne where I can edit a single source that used two mics that went to two separate tracks, then be able to edit each track separately after the Melodyne edits. (Watched it in a video and now I need to use it real world).

I create two mono buses and route the two guitar tracks to them, respectively. The two mono busses are then routed to a stereo bus where Melodyne is inserted and the editing takes place on both tracks at the same time.
After the Melodyne edits are done, I want to be able to then work with each of the two tracks separately (EQing, etc) and they say to route the stereo bus where I inserted Melodyne, to two additional mono buses.
My question is, when I insert a new bus, my choices are stereo or surround. How do I create a mono bus? Is that what the interleave-mono button is for?
I went through the whole explanation in case you know of a way I can do the above. I want to be able to edit both tracks of the same source at the same time in Melodyne, and then I want to be able to edit both single tracks separately after the Melodyne edits.
Ideas?
