Need help with X3, and EZdrummer 2

Hi all. Haven't been here in years. In fact, so long that I had to create a new username. lol 
So here's my question. I recently upgraded from ezdrummer to ezdrummer2. I created a song within EZdrummer2, but am not sure what the best way to convert the midi to audio tracks is. Is freeze the best way? If so, is fast freeze ok? Another question that I have is within the ez mixer I have assigned tracks, ie; Kick = 1 Snare = 2 and so on. However, when I freeze the midi track, all track end up as stereo tracks. Is this ok? I don't recall having this happen with ezdrummer. If no to all being stereo, how do you go about making say the snare mono, toms stereo and so on? Thanks in advance for any help..
