i have been veg for 31 years and i never did get the tofu thing, but then some people can do wonders with it and you just wouldn't know. i guess some folk just have the right knack (most have the left knack as well but that's another story)




Most people who work with tofu forget that in some cases it can pass for cheese, but in no cases can it pass for meat.  They also forget that it has no flavor and marginal texture.  It works as a filler, but not as the focus of an entree.
 
I used to work in a Chinese restaurant, and it was uncanny how often you would hear the following dialog:
Kid: Daddy, what's tofu?
Dad: You don't want that, it's disgusting.
Followed by the family ordering hot and sour soup and everyone in the family scraping the bottom of their cups, apparently not bothered by the strips of tofu they had just eaten in their soup.
 
So using tofu to stretch out a dish can work.  Barbecued tofu won't.

I thought "tofu" was short for "toe fungus!"
