Jam Origin MIDI Guitar demo
I just found this excellent demo jam (from 2009!) using MIDI Guitar 1 driving 6 instances of NI's FM6, one for each string. And MIDI Guitar 2 is even better. Impressive.

I have no idea how to separate the strings without hardware but I did find a way to drive 6 mono synths, I posted it here.

I just sent Ollie an email asking if the MIDI Guitar mentioned was his, and if so, how might the guitarist have accomplished it.
I have a feeling that scook's reference (using midiPolyphony or its equivalent) is how it was accomplished. I doubt that MIDI Guitar 1 existed in 2009.

IIRC, Jam Origin released the first betas for MIDIGuitar in 2012. I bought it during the original beta sale period. Early on there was some discussion about tracking each string separately. The feature never materialized.

IIRC, there was a Strat that had the GK-2A MIDI pickup installed for use with the Roland GR-30. It looks like that may be the guitar he is using. The GK-2A does put out one note per string (on a 13-pin MIDI connection).
