How to cook hard-boiled eggs? Seriously.

Hi All-

How do you cook them? The last two times I tried they turned out not fully cooked in the middle. I used the "bring them to room temperature, cover them with water, bring the water to a boil, remove from heat, cover, and let sit for 20 minutes" recipe. That had worked previously (and no, nothing's changed on my system, so it must be the eggs . I have what the store calls "Large", BTW.).

I've also seen the "put them in boiling water and cook for 15 minutes" recipe, but haven't tried that in a while (read "years")

It's not that I can't boil an egg, but it bugs me that I can't seem to get  consistent results. It shouldn't be that difficult to get it down to a science, right? Yes, Google is my friend and has helped some, but I'm sure someone here has the foolproof method!

Care to share? I don't want to be disappointed again.

Thanks-

-Susan

I let them boil for 20 minutes. I always add about a teaspoon of salt (helps the shells to separate easier).

I only boil them for 10 minutes.  I put them in water just covering them, turn the heat on high and when the water starts a "rolling boil" I'll start the timer and back off the heat just a tad so that it's boiling but not spilling over the sides of the pan.

I like my hard boiled eggs JUST fully cooked.  over cooking them makes the yolks crumbly and dried out.

Depends on the size of the egg but; put the egg(s) in a pan of cold water, bring to the boil. Boil for 6 minutes. Replace boiling water with cold, peel the eggs in the cold water (the shell comes off much easier)

Ruh-roh -- so much for a consensus!

@bapu- Do you start them in cold water or put them in once it's boiling?

Also, how many do you guys cook at once, or doesn't it matter? I read to put enough in a pot so there's not a lot of space for them to crash into each other and break while the water's boiling. Makes sense.

Thank you, thank you! I'll be experimenting later today, so if anyone else wants to chime in...

I saw someone on TV put a towel in the pan so they wouldn't bounce around...then she
lifted them out with the towel and put them in cold water. I don't cook.

I just realized I haven't seen you in a long time.....I think you're over cooking them there eggs.

Susan,

Start them in cold water. Usually cook about 12-14 at a time (for deviled eggs).

most of the time I've not had problems with them crashing into each other and breaking unless I fail to reduce the temperature after the rolling boil starts.  I've cooked from 1 to 12 at a time.

and start in cold water.  if you drop them into boiling water they will likely crack.

HI Susan - the method you described is the "foolproof" method!  Or at least that's what has worked for me.  Maybe you've got leprechaun problems.  Have your car keys been disappearing lately?

I generally prefer to use a fission reactor.  (Life-long aversion to anything that tastes like eggs.  Not enough therapy in the world to overcome this.)

I'm normally out of the building whenever eggs are being cooked or eaten.  Everyone is happier that way.

James has it spot on, and I have been doing hard boiled eggs regularly for salads for over 20 years.

Start in cold water, boil for 10 minutes, then, and most importantly, transfer then to cold water for at least another 10 minutes, makes sure the recepticle they are in is large enough or the eggs will reheat the water on their own. I make sure I do them in really good time (sometimes even the night before) and put them in the fridge still with the shells on. When you take them from the fridge the shells come off so easily you can do it with one hand !

Cheers

I'm going to try this first since it's the most different from what I tried last.

Thanks again, everyone-

I put mine (large or jumbo) in warm water, bring to a boil with a little bit of salt, cover tightly and remove from heat for 25 minutes, then submerge in running cold water for about three minutes. This fully cooks the yolk without overcooking it and they peel easily.

You know, I've seen that and I even tried it. Do I need to say it didn't work out so well (for me)?

I saw enough similar to think it actually might work, though -- i.e., I don't think it's a joke?

That's close to what I did, but leaves them in a little longer. I'll try that, too, starting with warm water.

My method is much the same as James's.

But I always add a little vinegar to the water too (as well as salt). My dear ol' Grandma always said to add the vinegar in case the egg cracked - she reckoned it helped to 'set' the leak!

As well, she always used to break a matchstick in half and put the 'headless' bit in the water - she said it stopped the eggs from cracking in the first place.

Not being a cook...I can do bacon and eggs in a pan.... eggs in the shell....

I recall my Mom putting them into boiling water for 3 minutes for soft boiled... my dad used to like them runny in a bowl with salt & pepper... they are quite tasty that way. Since I have chickens and get fresh eggs, and know what my chickens are fed. I don't mind the soft boiled or over easy kind.....

I found this page that might help you.  How to cook eggs, from someone who might actually know.

That's exactly the site I used, but even leaving them in for 20 minutes the yolk was a little softer than I like (except the times it was fine -- don't know what I did differently).

@Steve - Hmm... a "headless" matchstick. Will any lil ol' piece o' wood do, I wonder? I have heard about the vinegar, though -- maybe I'll try that.

Thanks-

Simmer gently for 10 mins ( if its a larg egg give it a couple of extra mins) take the pan to the cold tap let cold water run in to the pan to let the eggs cool quickly and leave them in the cold water for 5 mins ( this keeps the joke nice and yellow )

I never gave it too much thought to be honest Susan - I do remember that she'd snap off the head and crack the match again before putting it in the pan.

It might be one of those self-fulfilling things - she never had an egg crack and she always put a broken match in the water! Just a coincidence

However, I just found this: http://www.barbecue-smoker-recipes.com/boil-an-egg.html but it clearly states to use the whole match as the phosphorus in the head does something. Sadly it's too long since I did Chemistry 'A' Level to offer any suggestion myself

Currently in process. I'm trying it with just one egg (in case it all goes horribly, horribly wrong) and a tiny bit of vinegar & salt.

I'll report the results.
