That is a great way but too tedious really- a well performing de-esser (the one I and Whyz mentioned is real good) set in a way that it doesn't really hinder the performance is the way to go-
I do manual editing when I find a spot that is out of control in general.
When you have an artist that s's the whole time, I wouldn't edit every S unless they paid me $50 an hour to do it. Plus, it isnt neces'S'ary.
That being said, to each their own. If I thought my method would hinder a track, I wouldnt do it, period.
