There is a button on each channel strip in the console view, right below the FX bin, called Midi Output Channel, or something like that. Click on that and you can change the midi channel for that track.
By default, the Input Echo button will be automatically activated for the track that is in focus. When you then switch to another track - bringing it into focus, Sonar will turn off the Input Echo for the prior track and turn it on for the new track as it comes into focus. Additionally, you can manually turn Input Echo on and off on whatever tracks you want.
