I am sending this message from my newly installed hard drive with Win7x64!!!
I had several problems, and even after I got it to stop rebooting on me and stop the BSOD, installation wouldn't continue because I had formatted the hard drives as dynamic drives!!! I had gone to the internet to find out the pros and cons of setting them up as simple dynamic drives and didn't see ANYTHING in the "cons" about not being able to install windows 7 on a dynamic drive!!! so I had done that!
it was a real pain getting them set back to basic drives, but I got that done finally last night and then started installing and let it install overnight.
I'm not 100% of what the problem was because I changed more than one thing at a time while troubleshooting and it could have been a combination of things, but I am pretty sure actually was the memory that was causing the problem (thanks Bub, John, Jumbicat). I took out 2 of my 4 sticks of memory and disconnected my winxp drives and that's when it started working. I also put those 2 sticks back in after fixing my win7 drives by unformatting them and returning them to basic drives and the installation still worked. so I'm thinking it was probably one of those sticks of memory needed to be reseated.
anyway - I'm up and running so far! Now to load all of my software. ugh.
