Is it possible....

...to use a continuous controller to play midi note on and off?  If so, how?

    Doubtfully but I can not say no, most Midi instruments require a Note On, and a Note off component, along with pitch, velocity etc.  Not sure that a continuous controller would do that?

    You could associate the continuous controller to the the bend component, set the range to cover however many octaves you which to cover.  Press the note then bend the note across the range.
