Wind your clock forward then you can have lunch and you can participate in this thread (hence upping post count). When you get to lunch time wind it back for breakfast and start another thread about breakfast, increasing post count even more...... sorted.

    El Pollo Norteno

Butterflied chicken breast, grilled to perfection, then placed on a bed of onions. Then it's topped with a cheese sauce, and flashed in high heat to get the onions carmelizing, then its topped with pineapple rings and a skewer of 6 grilled shrimp. Margarita optional.

I do this to myself about once a month.

If you can see in the upper left, there is a margarita the size of my head. It dulls the pain from the grilling. Tequila has mystical healing powers, not to mention the ability to make me think I can stop speeding trains and jump tall buildings.

Randy, in that pic it looks like there's a base of some sort underneath the onions..like pizza dough or something?

No dough. That's the carmelized onions in the still bubbling cheese sauce. They bring it out still steaming and sizzling. The girl always says "Be careful Senor, it is very hot". To which I invariably reply "Really ?"
