Last week's special?
Fresh bay shrimp, red onions (eats up bad cholesterol for us old foggies!), mushrooms, and a Brie Cheese sauce. Only the fancy stuff here!
I had one a couple of weeks ago for veggiefakeatarians! Broccoli, Cauliflower, Red Onions, A smattering of cabbage, Mushrooms all sautéed lightly and then added to the omelet, with fresh tomatoes and an easy jack cheese sauce over the omelets, served with fresh fruit and English Muffins.
I try to vary things, but a meat only gets a bit too easy!
(In Santa Barbara, a place I cooked at, had 120 different omelets on the menu. It was insane, but even things like Linguica was available. It was even fun deciding, what you wanted to try first!
