from what I've read and the tutorials I've followed AUDIOSNAP appears to be designed for music with a steady beat.  My interest lies more along the line of making my accompaniments on piano or organ more fluid.  I use many pieces that have much rubato within them.  Is there a good way to use audiosnap to make a click track from an audio recording?
 
What other methods would be recommended?

I prefer to do this manually using Set Measure/Beat At Now (Shift+M). I've posted about this many times in different contexts. Here's one describing the general approach:

Try the Melodyne tempo mapping approach - drag the audio up to the time ruler, and this generates a tempo map automatically. Sometimes one Melodyne algorithm will give a better result than another.
