There's a setting in Preferences called "Always Echo Current MIDI track".
Disable this option and you can then (manually) choose to enable/disable MIDI echo.
 
I (like Jeff outlined above) prefer to leave Local Control enabled on my keyboard (for tightest possible timing/response).  
As long as you're not using MIDI echo, you'll just hear the live performance from the keyboard (as you're playing it).
