Hi. I assume I'm missing something obvious here. I regularly get sent sessions that have multiple track pairs, for example and electric guitar recorded with two microphones. I would like to just have one stereo track rather than two tracks panned left and right. In a busy project with this going on lots of the time Overheads, Room mics, acoustic guitars, piano, etc. it can really help to have fewer faders. 
 
At the mo I'm having to arm a stereo track and solo the two tracks in question and then record them. It really surprises me that there isn't a "turn these two mono tracks into one stereo track" option in the right click menu or somewhere. Please tell me I'm missing something and I'm an idiot. 

Bounce to track with Source = Buses and choose the appropriate bus. If other tracks also go to that bus, you'll need to temporarily solo the two tracks. And you'll also want to uncheck Bus FX in the bounce dialog as necessary.

I don't see the point of what you want to do if it isn't a stereo recording. You'll loose the control of blending the tracks. I would rather adjust the mix of the two (or three or...) tracks, then group the faders and hide one of them. You can Also group the arm buttons etc. Another way is to make busses for the stems for mixing.
 
To make stereo track, you have to bounce down the tracks in question to a new stereo track. 

You can also use the new Patch Point/Aux Tracks feature and narrow it down to one fader. 
The Aux Track will fit into your folder nice and neat and you can hide the other two (unless you need to tweak).
It's fairly quick and simple to set up and they fit right in to a busy workspace.
