I watched a really cool video that showed how to build a drum track using the layer track feature in the Step Sequencer. When I went to recreate the same thing (Video shows X1, I have Pro) the option didn't seem to be there. I have a work around where I save patterns and drag them to the appropriate markers but the layers option seemed more "natural" to me. Also, is there somewhere I can see every plug-in that's supposed to be included in my package rather than just the plug-in category. In the series of videos he used a really cool plug in called "Percussion Strip" which I don't seem to have in my plug-in manager.

Percussion Strip is only for X3 Producer / Platinum.
 
The video you linked is showing Sonar 8.5, but was "refreshed" with X1 commentary.
 
As for Layers, you can use Take Lanes to add patterns. I did a quick test and it works just like the video.
