I don't think Track Templates include color data.

It would be very cool to be able to assign a different default color to each track type in preferences. Audio, midi, bus, master bus, folder.

OK ... this is interesting ... yesterday I was working on a project and saved some of the audio tracks as a track template. And today, starting with a new project and inserting from the track template, the colors are intact! I'm on Ipswitch, and hadn't made any new templates for a few updates. I was surprised to see colors working.
