Hi guys just a quick one. Is it possible to change the default of a new track. I would like to be able to insert a new mono track rather than them being stereo. Thanks

Look at track templates

An after the fact option...choose Tracks > Select Track Input Series. Click on Help and also read the other references mentioned in Help. You can assign a bunch of tracks all at once to a mono input.
 
But I think the track template idea is best, as you can drag in a track with all the exact characteristics you want.

Thanks guys. I suppose I'll keep using my templates I was just hoping I could use a key binding for insert track and it would be mono. Just to quicken things up when tracking and I have an idea. Thanks for the replies.
