If you're thinking of getting an SM58, you might be better off with a 57.  I think it has a bit more utility (although you said you would use it for vocals only) but it is essential the same mic...

Assuming that it's not intended for stage use, the 57 seems like a better option. A 58 is really just a 57 with a built-in pop filter.

I noticed the Blue Baby Bottle mentioned in this thread and I've found one for what seems to be a fair enough price.
I currently have a Rode NT1A. 
Would the Baby Bottle be a good addition for me?

Well I bought one.  I like it.  I have a deepish vocal quality without signing high notes.  I like the Baby bottle for my vocal range.
 
I had to buy another mic stand that would hold it correctly.  I had a boom mic style stand and it wanted to fall over with the baby bottle.
 
the pop filter isn't that great as it sits to close to the mic - but you can get a 3rd party one and it works fine.
 
if I had the money I would buy a Bottle and start collecting capsules to play with.  great company, great box/packing.
 
all that said I do have a rode NT1A on my list to get/check out as well.  I want some extra tools in the toolbox for differences.
 
what is your vocal style range?  what is a good deal, can  you afford the mic? what mics do you currently own.

I purchased a Blue Bluebird and love it.  I also got a FREE 
Encore 100 with it...and paid less then $200 for both
on a Black Friday deal....I use my E100 all the time for 
live use...it's great....

I have quite a low vocal range which I'm hoping will benefit from this kind of mic.
 
My plan is to use it as an alternative to the Rode NT1A that I have for vocals, and also I plan to use it along side my Rode NT1A when recording acoustic guitar in stereo.

baby Bottle should work for you, that's a decent price though I dunno if I would want a demo model that has seen dust and hands all over it.
 
if your going to record your guitar in stereo it's always a good idea to record using 2 of the same mics.  if you use the Rode and the Blue to record the guitar L/R your going to end up with different colored sounding guitar.

Ex-demo is not ideal. That said, new Baby Bottle's are retailing here in the UK at £270 ($400). I got this one for £125 ($185), so you can understand the appeal.
 
I understand it's better to use two of the same mic for recording guitar in stereo. I have two SM57s, but whenever I have tried recording through these I have found the sound to be harsh. I've used the NT1A and an SM58 , so while the Baby Bottle with the NT1A won't be perfect, it will be an improvement on my current situation.

I have two mics, an AT2020 and a cheap Shure that's intended for speaking voice only. If I had the money, I might be tempted to buy more expensive ones, but I doubt I'd hear the difference being 30% deaf in one ear.

I have a large number of mics, all of which have been retired in favor of the CAD Equitek E100S... just exquisite, lowest noise of any mic, built right here in the USA...

Alternatives

Vastman - after reading and monitoring this thread I noticed your suggestion above and added it to my candidates including quite a few of the ones mentioned elsewhere in this thread.

There are a considerable number of articles and comparative reviews out there. YouTube has an ample selection of clips allowing you to hear many of these mics either side by side in comparisons or in depth recording samples of any of these mics.

This one kept getting more and more worthy after comparing and listening to it in depth.

There are a good number of YouTube clips providing samples of it alone or in comparison to other choices.

I was able to purchase the CAD Equitek E100S for just over $300. I think it is just what I was looking for.
