As Craig says, panning isn't a record function but rather a playback function. Pan settings should not, AFAIK, have any effect on how a track is recorded. IOW, panning is not an intrinsic property of a recorded track, which is just audio that has no knowledge of panning.
Perhaps your problem is that you're recording in stereo? Unless you're recording a stereo pair, e.g. X/Y or Decca tree, all of your recorded tracks should be mono (input is from just 1 interface channel and the track interleave is set to mono).
If you
are recording stereo tracks from a pair of microphones, then panning has no meaning and the pan sliders should be centered. If you need to shift the stereo image, you'll want to use the Channel Tools plugin rather than the pan control.
