I never thought anyone would use those for musical purposes! They're intended to play in the background when you want to chill. I ran off a set of CDs for a massage therapist and another for a parent whose child had a hard time going to sleep

(one of the environments has a 2.5 Hz modulation impressed on it to induce sleep).
Anyway, it's quite simple to capture the sound. Define a region and bounce to track. It doesn't matter that there's nothing in the track with the environment plug-in; the environment itself generates sound. Then you have a clip you can fade in, out, flange, whatever.
If you want to make an environmental CD, just define a 60-minute region, bounce to track, and burn the track to a CD.
