Cake should change the "overwrite" name... I too never considered this because of the name... any suggestions?  also a name for what robinetti wants to do....
 
We could put it in as a feature change request... easy to do.

Right clicking the record button is the quickest way to access the different options. "Sound on sound" is to record a new take while hearing the previous ones.

This is correct for stopping, then recording over a take, but the OP said he was loop recording.  My experience is that whenever loop recording, the previous takes cannot be heard.

According to the Help the Mute Previous Takes option shouldn't affect Loop Recording but I'm not sure whether that means the previous takes should or should not be heard.
