I was just wondering if anyone knew if Sonar Artist, Professional, and Platinum will have physical copies made available at any given point in time?

Yes, some retailers are taking pre-orders for boxed versions of the update. For example, http://www.sweetwater.com/store/detail/SonarPltUpBx
 
Cakewalk has mentioned they will have physical media at their store some time after the product is released.
