I have just started to set up track templates for various things (e.g. Addictive Drums.)  I saved them out of a new project which I opened with a project template (probably irrelevant) and it did not keep the track color.  Is this expected behavior or something I can change?

hmmm. going from memory; I think there has been previous mention of the colors not being saved on a track templates. 

Track templates can't recall specific colors. However, you can set up a default color for new tracks. Any track template you bring in will adopt that color. You can also have a separate default color for new buses. If a track template includes a bus, it will adopt the default bus color as well.
 
Both of these default colors are set under preferences.
