I'm not familiar with the UA-25. does it have an ADAT out on it? Actually thr VS 700 R is an interface-USB, soundcards are a different beast, but you knew that. I've got sixteen channels using a Motu 2408 Mk 3 in standalone mode via the ADAT out to the V 700 R. 8 from it and 8 on the V 700 R. If you're using USB for the UA-25, I'm not sure.
The VS 700 system will be much better I am sure.
It has an optical out but it's a USB 1.

I still can't get the Fantom to play.....

It doesn't matter if it's a USB 1 if you're going to use the optical out as far as I know. You should be able to sync the UA-25 to the V 700 R for eight more channels.
When you open Sonar 8 go to the surfaces/controllers page in options and make sure you have the console listed in the in/out ports. Open the Midi devices option and make sure you have Console and Fantom checked Inputs/Outputs. Uncheck everything else associated with the V700.
When you open a project with the Fantom inserted, you should get the Fantom coming up. Click the setup midi button and make sure you have Fantom VS in all four boxs.
As to your track inputs- All inputs Omni should work to start with on the Fantom midi track. You can point the input to the particular channel the controller sends later as well as set up multiple midi tracks for all 16 channels sent from your controller if it does that.
Make sure input monitoring is on. Make sure you have Fantom VS, left, right, or stereo in the input of the synth audio track, and of course that the output is set to get to your speakers. That should get you rolling.
