Hello,
 
How do I bounce my finished simple instrument track to audio?  I don't wish to freeze, but wish to bounce to a new audio track with the ProFX from the simple instrument track baked into the new track.
 
I know this sounds really simple, but I am not sure of the option. Oh and how I do bounce it to either Mono or Stereo?   all my simple instruments are in stereo, but kick and bass I wish to bounce to a mono track.

In Track View, right click & choose Bounce to Track.
 
There are several options in the dialog box letting you decide track format, destination etc.

If your destination audio track needs to switch from stereo to mono you can right-click the clip and select Convert to Mono. I do that all the time.

Oh ok great thank you.  Converting to mono increases the volume by 3db I see.  Does it change any other tonal qualities or just volume?

Adam,
I will typically Freeze it, Then grab the frozen clip while holding CNTRL and drag it to a new track or an empty space in Sonars TV. Once a track is frozen it acts almost like a normal audio track (copy/paste)
 
Then all you need to do is unfreeze the original track.
(There are also freeze options that will allow you to print or not print FX to freeze).
 
Its basically the same as bouncing the track minus the BS of dialog menus (unless you need those).
Then right click/Convert to mono.
