Thanks all for the replies!  I'm running an i7 processor so I definitely think the bottleneck is the hard drive.
 
edit: got an SSD and cloned it!  Works great! THanks everyone

I would do it differently and split it into stages:
  1. Add a new small SSD for projects.
  2. Add another SSD (whatever size you need) for multisamples.
  3. Get a 3rd SSD and install the o/s and software. Keep the old HDD for storage, backups and archiving. Maybe initially keep the o/s installation on the old drive for dual boot and ditch it later after having verified that everything is working properly on the new system.
Three small SSDs are better than one big one.

I believe that as long as the drive is large enough to hold the original partition, cloning will work fine followed by extending the partition afterwards if that be the case...
