You can do this in the Plugin Manager.

OK - I JUST went through the exercise of getting Kontakt 5's names figured out on MY system.  Your post reminded me how much of a PITA it has been for the longest time, because it was always a guessing game to get the right one.

Go to Utilities>Plug-in Manager and on the left side of the dialog window - under Plug-In Categories, choose VST Instruments.  You will see the 3 Kontakt 5 flavors listed, with no clue as to which one has which number of outputs.

Click on the first Kontakt 5 of the 3 that are listed, and then click on Plug-in Properties (toward bottom of window center).  This opens up the properties page for that dll.  Here you can change the name, and to know which one of the Kontakt 5-s you are looking at, click on Details, and it will tell you the number of outputs.

I changed the names of all three Kontakt 5 VSTi instruments to:

Kontakt 5 - 08 Outs
Kontakt 5 - 16 Outs
Kontakt 5 - 64 Outs

This changes the displayed names, both in the Plug-in Manager displayed list, and in the list when you go to insert a Synth to the Synth Rack.

I hope that helps.

Also, since I pretty regularly have multiple instances of Kontakt inserted into the rack, I also rename each loaded instance to reflect something more meaningful than Kontakt 5 - 1, etc.  I use names like Horns, Strings, etc., depending on what instruments are loaded into a given Kontakt 5 instance.

Here is the documentation link on renaming instance namer in the Synth Rack:

In addition to directly manipulating the plug-in name in the Plug-in Manager, there is an AUD.ini variable to control VST name format.

Add  VSTPlugInNameFormat in Edit > Preferences > Initialization file. Acceptable values for the variable are 0, 1, 2, 3.

0 - Format 0:  Vst supplied name which is the new default
1 - Format 1:  DLL Name which is the old behavior
2 - Format 2:  VST Plugin Name (DLL Name)
3 - Format 3:  DLL Name (VST Plugin Name)

For some reason I only have 1 Kontakt listed under VST Instruments (64 output). The other 2 (8 & 16 output) are under VST Audio Effects. Why is that?
