I have always used intel so its a bit hard to step over to an AMD system well except when it comes to the price.
I realize this could be a bit of a complex question but...
Generally speaking if you have a processor of similar specs. is there a huge difference in performance and how there work with Sonar or other DAWs?

Generally the Intel's tend to outperform AMD.  Not to say that AMD doesn't work, from posts on this forum many use AMD. 
 
The new AMD Ryzen CPU's are touted as "the latest and greatest" and better than Intel.  Our resident DAW builder guru stated that audio latency is not very good with the first generation of the Ryzen CPU's.  They are great for video (gaming).

Ryzens are still a tad bit slower in gaming reviews, but still worth the cost.
 
For most productivity needs though, Intel still has higher performance per core.
 
AMD are good to consider on a strict budget, but if money isnt the issue then stick to Intel.

On a budget an AMD FX6300 or 835O are hard to beat for the price.  If you want a more affordable Intel go with i5s.
